Handmade Pasta Dough

Ingredients

250g "00" Flour

100g Fresh Egg Yolks

1 Whole Fresh Egg

Preparation

-Sift the flour onto a clean kitchen counter. in a mound.  A wooden surface works best but metal or stone will do.


-Make a well in the center of the flour.


-Add your whole egg and yolks to the well.


-Using a fork, beat eggs and yolks into the flour slowly pulling the flour in as it thickens.


-When the mixture starts to come together, start to roll it into a ball with your hands.


-Begin to knead the dough.


-As the dough comes together. wash any dried bits of dough off your hands and return to kneading it.


-Kneading the dough usually takes 8-10 min. (It is hard to overwork pasta dough on the first kneading with this recipe).


-When the dough is smooth and not sticky, cover it in plastic wrap and set it aside for at least 30 min on your counter.


-Unwrap the dough and divide it into 4 pieces. Work one quarter at a time, keep the other pieces covered until ready to use.


-Pass the dough through a pasta machine starting at the thickest setting until you slowly reach the thinnest.


-Carefully dust each sheet with a bit more flour and let them sit for about 5 more minutes to air dry.  It helps the noodles not to stick together when cut.


-Now your pasta dough is ready for whichever shape you would like to make!
